Things you'll need:
1 huge container to hold your pancake mix
4 cups of whole wheat flour
4 tbsp ground flax seed
9 tsp baking powder
1 tsp salt (i use pink himalayan, it's your call)
4 tsp cinnamon (optional, but i love cinnamon!)
3 tsp cane sugar
------------------------
1 cup almond milk
1 tsp vanilla extract (optional)
optional scoop of protein powder- vanilla (optional for those looking for the extra umph of protein..Id wait to mix in until youre making your individual pancakes for the morning!)
DIRECTIONS:
Take all of your above ingredients (except protein powder, milk and vanilla extract) and combine into container. Mix well.
When preparing pancakes with this mix, here's what I do:
-take 1 cup of my mix
-use 2 tbsp egg whites (i use the carton, my fellow egg eaters can just use 1 egg)
-1 tsp vanilla extract (Gives it soooo much flavor)
-add almond milk until the mix becomes evenly stirred and smooth.
On days when i need the extra protein, ill add a small scoop of protein powder and opt out of using the vanilla extract) there is so much you can do with this recipe as far as add ins like fruit/dark chocolate, or keeping it simple and topping it with bananas as I typically choose to do. The choices are ENDLESS, but you have to start somewhere.
They key to this recipe is within the flax seeds + low carb ingredients. Flax seeds are known for being essential to hair and skin health, lowering cholesterol, containing important amino acids and PROTEIN. There are so many benefits of such a little seed (did I mention it's gluten free?) that adding them to your regular diet will do nothing but enhance your health! I chose flax and kept the rest of my ingredients as far on the healthy side as one could keep them, in hopes of creating something non-bland and non boring, that will make each pancake breakfast worth having.
Top them with some sugar free syrup if you're trying to cut on carbs, or whatever your heart desires.
Enjoy your protein pancakes!
