Healthy Garlic Shrimp Alfredo!


So a few of my blog viewers have been waiting on me to post my pasta recipe. Here it is!

You may think finding healthy food options that taste good is challenging, but in all honesty its about substituting your ingredients for healthier alternatives. You can make almost any meal a healthier meal!

Ingredients:

1 Chicken boullion cube

1 lb of Shrimp

5 Garlic cloves

Parsley (optional)

Whole wheat spaghetti pasta

1 tbsp olive oil

1 tbsp butter (optional)

1 cup Half and Half OR plain greek yogurt (replacement for heavy whipping cream)

1 1/2 cups Italian 4 cheese blend cheese

Mrs. Dash garlic and herb seasoning

Pepper

Green onion (optional)

Chives (optional)

1 cup pasta water (yes...keep ya pasta water)

DIRECTIONS

1. Cook minced garlic and shrimp with olive oil and butter for 2-4 minutes in a separate pan, occasionally stirring. (Medium heat) Remove shrimp from the pan.

2. Cook pasta in separate pot/pan. Drain pasta when cooked, but save at least a cup worth of the pasta water. Dissolve the 1 cube of chicken broth bullion in the hot pasta water.

3. Add the pasta water, half and half (or yogurt), and pasta into the skillet that you cooked the shrimp. Bring pasta and sauce to a boil while stirring, then add cheese and continue to stir until cheese melts and coats the pasta.

4. Reduce to simmer after about one minute and continue to let it cook, constantly stirring so that the sauce thickens to your preference. After another minute or two, add in the shrimp (you can add all the shrimp at once or just half and put the rest on top when done)

5. To serve, top your pasta with chopped chives, green onions, parsley, or a combo of the three as I did! ENJOY!
